  • 2 Tbsp olive oil
  • 3 cloves garlic, minced
  • 1 Tbsp fresh lime juice
  • 2 tsp chili powder
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • 1 tsp ground cumin
  • ¼ tsp ground cinnamon (optional)
  • 1 tsp salt
  • 1–2 lb chicken (breasts, cutlets, thighs, or drumsticks)

Instructions

  1. Prepare the marinade:
    In a large zip-top bag, combine olive oil, minced garlic, lime juice, chili powder, smoked paprika, oregano, cumin, cinnamon (if using), and salt.
  2. Marinate the chicken:
    Add chicken to the bag. Seal tightly and massage the bag to coat the chicken evenly with the marinade.
  3. Refrigerate:
    Place the bag in the refrigerator for 2–24 hours to allow flavors to penetrate the chicken.
  4. Cook the chicken:
    Remove chicken from the marinade and grill or bake until the internal temperature reaches 165°F (74°C). Use an instant-read thermometer for accuracy.
