  • 1 green bell pepper, diced
  • 1 red bell pepper, diced
  • 3 celery stalks, chopped
  • 2 cloves garlic, minced
  • 14 oz can crushed tomatoes
  • 1 tablespoon smoked paprika
  • 1 teaspoon salt
  • 1 teaspoon cumin
  • ½ teaspoon dried oregano
  • ½ teaspoon dried basil
  • ½ teaspoon dried thyme
  • ½ teaspoon black pepper
  • ¼ teaspoon cayenne pepper
  • 1 cup uncooked white rice (long or short grain, not instant)
  • 2 cups chicken broth
  • 1 lb shrimp, peeled and deveined
  • Chopped green onions (optional, for garnish)

Instructions

Heat the oil in a large Dutch oven over medium heat. Add the sliced andouille sausage and chicken pieces, cooking until lightly browned on all sides, about 5 minutes.

Add the onion, bell peppers, and celery. Cook until the vegetables soften and the onion becomes translucent.

Stir in the minced garlic and cook for 1 minute until fragrant.

Add the crushed tomatoes, smoked paprika, salt, cumin, oregano, basil, thyme, black pepper, and cayenne pepper. Mix well to combine all flavors.

Add the uncooked rice and pour in the chicken broth. Stir thoroughly.

Bring the mixture to a boil, then reduce heat to medium-low. Cover and simmer for about 20 minutes, stirring occasionally, until the rice is nearly cooked and most of the liquid is absorbed.

Stir in the shrimp, cover again, and cook for another 5 minutes, or until the shrimp are pink and fully cooked.

Remove from heat, fluff gently, and garnish with chopped green onions if desired.
