Ingredients

Stir-Fry Ingredients:

  • 8 ounces dangmyeon (sweet potato starch noodles)
  • 2 tablespoons olive oil (or mild-flavored oil), divided
  • 1 small white onion, thinly sliced
  • 6 shiitake mushrooms, thinly sliced
  • 1 red bell pepper, cored and thinly sliced
  • 1 carrot, peeled and thinly sliced
  • 3 garlic cloves, minced or pressed
  • 3 handfuls fresh baby spinach
  • Toppings: toasted sesame seeds, thinly sliced green onions

Sauce Ingredients:

  • 1/4 cup low-sodium soy sauce (or more to taste)
  • 2 tablespoons maple syrup
  • 1 tablespoon toasted sesame oil

Steak Ingredients:

  • 1 pound sirloin or flank steak, thinly sliced against the grain into bite-sized pieces
  • 1 tablespoon soy sauce
  • Fine sea salt and freshly cracked black pepper

Instructions

Cook the Noodles

  1. Boil sweet potato noodles al dente according to package directions. Avoid overcooking to prevent mushiness.
  2. Drain and rinse with cold water until chilled.
  3. Strain well, drizzle with sesame oil, and toss to coat. Set aside.

Marinate the Steak

  1. In a large bowl, combine steak with 1 tablespoon soy sauce and a pinch of black pepper.
  2. Toss to coat and let marinate for 5–30 minutes.

Prep the Sauce

  1. Whisk together soy sauce, maple syrup, and toasted sesame oil in a small bowl. Set aside.

Stir-Fry the Steak

  1. Heat 1 tablespoon of oil in a large sauté pan over high heat.
  2. Cook steak for 4–5 minutes, stirring occasionally, until cooked through.
  3. Transfer steak to a clean plate and set aside.

Stir-Fry the Vegetables

  1. Reduce heat to medium-high and add remaining oil. Sauté onion for 3 minutes.
  2. Add mushrooms, bell pepper, carrot, and garlic. Sauté 4–5 minutes until tender but slightly crisp.
  3. Stir in spinach and cook 2 minutes, tossing frequently until wilted.

Combine Everything

  1. Remove pan from heat. Add noodles, steak, and sauce to the vegetables. Toss to combine.
  2. Taste and adjust seasoning with additional soy sauce or black pepper if needed.
