  • 1 pound (450 g) steak (rump, top round, or flank), sliced into long strips
  • 1 onion, peeled and sliced
  • 2 tablespoons fajita seasoning
  • ½ cup (120 ml) beef or vegetable stock (or water)
  • Salt, to taste
  • 3 bell peppers (red, green, and yellow), thickly sliced
  • Flour tortillas, for serving
  • Optional garnish: chopped cilantro

  1. Prepare the ingredients: Slice the steak into long strips, and slice the onion and bell peppers.
  2. Add to the Instant Pot: Place the steak, onion, fajita seasoning, and ½ cup of stock into the Instant Pot. Add bell peppers now if you prefer soft vegetables; otherwise, add them after pressure cooking.
  3. Pressure cook: Secure the lid and set the vent to SEALING. Select PRESSURE COOK/MANUAL and set to 10 minutes at high pressure. The Instant Pot will take 6–7 minutes to reach pressure before cooking begins.
  4. Release pressure: When the cooking program ends, carefully perform a quick release to remove the steam.
  5. Add bell peppers (if needed): If you didn’t cook the bell peppers initially, add them now, cover with the lid, and let them steam for a few minutes until tender.
  6. Drain or reserve liquid: Remove the fajitas using a slotted spoon, reserving a little cooking liquid if desired for extra flavor.
  7. Serve: Warm the flour tortillas, fill with the steak and vegetable mixture, drizzle with some reserved sauce, and garnish with chopped cilantro.
