Ingredients

  • 2 pounds (900 g) baby potatoes, washed and halved
  • 2 cloves garlic, minced
  • 1 tsp thyme
  • 1 tsp oregano or rosemary
  • ½ tsp ground black pepper
  • 1 tsp sea salt flakes
  • 3 tbsp butter, melted
  • ½ cup (120 ml) vegetable stock

Instructions

  1. Prepare the potatoes: Add the halved baby potatoes to the Instant Pot. Top with minced garlic, thyme, oregano or rosemary, black pepper, sea salt, and melted butter.
  2. Add liquid: Pour in the vegetable stock and stir gently to coat the potatoes evenly with butter and seasonings.
  3. Pressure cook: Secure the lid and set the vent to SEALING. Select the PRESSURE COOK / MANUAL setting and cook on high pressure for 7 minutes. The Instant Pot will take 6–7 minutes to reach pressure before starting the cooking timer.
  4. Release pressure: When cooking is complete, perform a quick release of steam. Carefully remove the lid.
  5. Serve: Serve immediately as a flavorful side dish.
