Ingredients

  • 1½ cups (300 g) brown lentils, rinsed (no need to presoak)
  • 1 medium yellow onion, diced
  • 2 medium carrots, peeled and diced
  • 2 ribs celery, diced
  • 3 cloves garlic, minced
  • 1 (14.5 oz / 400 g) can diced tomatoes, undrained
  • 2 dried bay leaves
  • 1 tablespoon ground cumin
  • 2 teaspoons dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • ¼ teaspoon ground black pepper
  • 5 cups (1.2 liters) vegetable stock
  • 2 cups (100 g) baby spinach leaves

For Serving:

  • Juice of 1 lemon
  • Bread, for dipping

Instructions

  1. Prepare Ingredients in the Instant Pot:
    Add lentils, onion, carrot, celery, garlic, diced tomatoes, bay leaves, cumin, oregano, thyme, smoked paprika, salt, and black pepper to the Instant Pot. Pour in the vegetable stock and stir to combine.
  2. Pressure Cook:
    Secure the lid and set the valve to the sealing position.
    Select the Pressure Cook/Manual function on high pressure and set the timer for 20 minutes. Allow the Instant Pot to reach pressure and cook the soup.
  3. Release Pressure:
    Once cooking is complete, perform a quick pressure release and carefully remove the lid.
  4. Add Spinach:
    Stir in the baby spinach leaves. Cover the pot with the lid again for a few minutes to let the spinach wilt. Taste and adjust seasoning if needed.
  5. Serve:
    Ladle the soup into bowls and add a squeeze of fresh lemon juice for brightness. Serve with warm bread on the side.
