Ingredients

  • 6 chicken thighs, bone-in and skin-on
  • 1 Tbsp olive or vegetable oil
  • Salt and pepper, to taste
  • ยฝ cup water
  • 2 cloves garlic, minced
  • ยผ cup honey
  • 2 Tbsp Dijon mustard
  • 3 Tbsp stone-ground mustard (whole grain)
  • 1 lb (450 g) baby potatoes, halved
  • 3 carrots, peeled and cut into 1โ€“2 inch pieces

Instructions

  1. Sautรฉ the Chicken
    Set the Instant Pot to Sautรฉ. Heat the oil, season the chicken thighs with salt and pepper, and brown them well, starting with the skin side down.
  2. Deglaze the Pot
    Add ยฝ cup water to the pot and use a wooden spoon to scrape up any browned bits from the bottom. Turn off the sautรฉ function.
  3. Add Sauce and Vegetables
    Add garlic, honey, Dijon mustard, and stone-ground mustard. Stir to combine. Add the potatoes and carrots, and season with additional salt and pepper.
  4. Pressure Cook
    Close the lid and set the valve to Sealing. Press Manual or Pressure Cook on high for 8 minutes.
  5. Release and Serve
    Quickly release the steam once cooking is complete. Open the lid carefully, garnish with chopped parsley, and serve hot.
