Creamy, cozy, and full of warm fall flavors, this Instant Pot Butternut Squash Soup is a nourishing bowl of comfort. With the perfect balance of savory, sweet, and a hint of spice, it’s made entirely in the pressure cooker for a quick, fuss-free meal.

Ingredients

  • 2 cups vegetable stock
  • 4 cloves garlic, peeled and minced
  • 1 carrot, peeled and diced
  • 1 Granny Smith apple, cored and diced
  • 1 medium butternut squash*, peeled, seeded, and diced
  • 1 sprig fresh sage
  • 1 white onion, diced
  • ½ teaspoon salt, or to taste
  • ¼ teaspoon freshly ground black pepper, or to taste
  • ⅛ teaspoon cayenne pepper, or more to taste
  • Pinch of ground cinnamon
  • Pinch of ground nutmeg
  • ½ cup canned unsweetened coconut milk

Optional Garnishes:

  • Extra coconut milk for drizzling
  • A sprinkle of smoked paprika or cayenne pepper

*Tip: To save time, use pre-cut butternut squash available in most grocery stores.

Instructions

  1. Add Ingredients to Instant Pot:
Combine the vegetable stock, garlic, carrot, apple, butternut squash, sage, onion, salt, pepper, cayenne, cinnamon, and nutmeg in the Instant Pot. Stir to mix.
  2. Pressure Cook:
Secure the lid and set the vent to “Sealing.” Press “Manual” or “Pressure Cook,” set to High Pressure, and adjust the time to 8 minutes.
  3. Quick Release:
Once cooking is complete, carefully switch the valve to “Venting” for a quick release. When the steam is fully released and the valve drops, open the lid.
  4. Finish the Soup:
Remove and discard the sage sprig. Stir in the coconut milk.
  5. Blend Until Smooth:
Use an immersion blender to puree the soup directly in the pot until completely smooth. Alternatively, carefully transfer the soup in batches to a traditional blender and blend until smooth.
  6. Taste and Adjust:
Taste and adjust the seasoning with more salt, pepper, or cayenne if desired.
  7. Serve:
Ladle the soup into bowls and garnish with a swirl of coconut milk and a sprinkle of smoked paprika or cayenne, if using.

Tips

  • Chop veggies uniformly for even cooking.
  • Use an immersion blender for easier cleanup.
  • For richer flavor, sauté the onions and garlic in the Instant Pot before pressure cooking.
  • Make it ahead: The flavors deepen after a day—great for meal prep.

Variations and Substitutions

  • Make it creamy with dairy: Use heavy cream instead of coconut milk if you’re not dairy-free.
  • Add protein: Stir in cooked white beans or lentils after blending.
  • Spice it up: Add more cayenne, a dash of curry powder, or smoked paprika for a bold kick.
  • Sweet version: Use a sweet apple like Fuji and a touch of maple syrup.

FAQs

Can I use frozen butternut squash?
Yes, just add it directly to the pot—no need to thaw.

Can I double the recipe?
Yes, as long as you don’t exceed the Max Fill line in your Instant Pot.

Is it freezer-friendly?
Absolutely! Let it cool completely, then freeze in airtight containers for up to 3 months.

How do I make it on the stovetop?
Sauté the onions, garlic, and carrot in a pot, then add all remaining ingredients (except coconut milk). Simmer until tender, blend, and stir in coconut milk.

Serving

Serve this soup hot with crusty bread, a grilled cheese sandwich, or a side salad. It’s perfect as a light lunch, appetizer, or a comforting dinner on cold nights.

Suggestions

  • Garnish with roasted pumpkin seeds or a drizzle of chili oil for texture and flair.
  • Serve in a bread bowl for a fun presentation.
  • Pair with grilled cheese or panini for a hearty and complete meal.
  • Top with crispy chickpeas or fresh herbs for a finishing touch.
