This Indian Kachumber Salad features fresh cucumber, tomatoes, onions, and herbs with a tangy lemon dressing. Perfect as a light, healthy side for curries, grilled meats, or rice dishes.

Ingredients

  • 1 large English cucumber, diced
  • 2 medium tomatoes, chopped
  • 1 small red onion, chopped (or yellow onion)
  • 1 green chili, finely chopped (optional)
  • 2 Tbsp fresh cilantro leaves, chopped
  • 1 Tbsp fresh mint, chopped
  • 1 Tbsp lemon juice, lime juice, or vinegar
  • ยผ tsp ground cumin
  • ยฝ tsp salt
  • ยผ tsp ground black pepper

Instructions

  1. Combine the vegetables
    In a medium bowl, mix the diced cucumber, chopped tomatoes, onion, green chili (if using), cilantro, and mint.
  2. Add seasonings
    Pour in lemon juice (or lime juice/vinegar), and sprinkle cumin, salt, and black pepper over the vegetables.
  3. Toss and adjust
    Toss the salad thoroughly to combine all ingredients. Taste and adjust the seasoning if needed.
  4. Serve
    Best served immediately, but you can cover and chill for up to 2 hours before serving.
