  3. Pour in the chicken broth and scrape the bottom of the pot to loosen any browned bits. Return the pork to the pot. Secure the lid, set the valve to “sealing,” and cook on high pressure for 1 minute.
  4. While the pork cooks, mix the minced garlic, soy sauce, grated ginger, and honey in a small bowl.
  5. When the cooking cycle ends, allow the pressure to naturally release for 10 minutes before carefully opening the lid. The pork should reach medium-well (155-160°F) with a slight pink center if seared properly.
  6. Remove the pork from the pot and let it rest for 5 minutes. Leave the cooking liquid in the pot.
  7. Stir the sauce mixture and cornstarch slurry (cornstarch mixed with cold water) into the liquid in the Instant Pot. Turn the sauté function back on and cook until the sauce thickens, about 2-3 minutes.
  8. Slice the pork into medallions and return them to the pot, tossing to coat with the sauce. If you prefer the pork more done, simmer the slices in the sauce for a few more minutes before serving.
