  • 8 ounces cremini mushrooms, sliced
  • 2 cups low-sodium beef broth
  • 1 tablespoon ketchup or tomato paste
  • 1 tablespoon low-sodium soy sauce
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon Dijon mustard
  • 2 teaspoons cornstarch
  • 2 teaspoons water
  • A few drops of browning sauce (optional, for color)
  • Salt and freshly ground black pepper, to taste
  • Fresh Italian parsley or other fresh herbs for garnish (optional)

1. Make the Salisbury Steak Patties:

  1. In a large bowl, whisk the egg. Stir in panko breadcrumbs, ketchup (or tomato paste), Dijon mustard, Worcestershire sauce, salt, and black pepper.

  3. Shape the mixture into 4–6 oval patties, each about ½-inch thick.

2. Cook the Patties:

  1. Heat 1 tablespoon of olive oil in a large nonstick skillet or sauté pan over medium-high heat.
  2. Add the patties and cook 4–5 minutes per side, until browned and cooked through (internal temperature of 150–155°F).
  3. Transfer patties to a plate and set aside.

3. Prepare the Mushroom Onion Gravy:

  1. Remove excess grease from the skillet. Over medium heat, add the onions and cook until softened and lightly browned, about 3–4 minutes.
  2. Add mushrooms and cook until tender, about 3 more minutes. Season with a pinch of black pepper.
  3. Stir in beef broth, ketchup (or tomato paste), soy sauce, Worcestershire sauce, and Dijon mustard.
