Ingredients

  • 4 large russet potatoes, peeled
  • 2 quarts peanut oil (for frying)
  • Salt and black pepper, to taste

Instructions

  1. Cut the peeled potatoes into ¼-inch sticks using a fry cutter, mandolin, or knife.
  2. Place the cut potatoes in a large bowl and rinse under cold running water until the water runs clear.
  3. Cover the potatoes with cold water, add ice, and refrigerate for at least 30 minutes.
  4. Heat peanut oil in a deep pot (or deep fryer) to 325°F (160°C). Make sure there is enough space in the pot to prevent overflow when frying.
  5. Drain the potatoes and pat them completely dry with a clean towel.
  6. Fry the potatoes in batches for 6–8 minutes, stirring occasionally, until soft and lightly golden.
  7. Remove and place on paper towels to drain. Let them rest for 10 minutes.
  8. Increase oil temperature to 350°F (175°C).
  9. Fry the potatoes again in batches for about 1 minute, until golden brown and crispy.
  10. Drain again on paper towels and season immediately with salt and pepper.
  11. Serve hot.
