  • 1 medium onion, finely chopped
  • 3 (16 oz) cans pork and beans, undrained (or 8 small cans)
  • 3 tablespoons mustard (yellow or Dijon)

  • ⅔ cup ketchup
  • ⅓ cup molasses
  • ¼ cup brown sugar
  • Salt and black pepper, to taste

  1. Preheat oven to 350°F (175°C).
  2. In a large skillet, cook the bacon until crispy. Transfer to paper towels, then crumble. Reserve about ¼ cup of the bacon drippings in the pan.
  3. Add chopped onion to the same skillet and sauté in the bacon fat over medium heat until softened and translucent. Add a little oil if needed.
  4. Stir in the pork and beans (with liquid), mustard, maple syrup, ketchup, molasses, brown sugar, salt, pepper, and crumbled bacon.
  5. Mix well and transfer everything into a 9×13-inch baking dish (ungreased).
  6. Cover with aluminum foil and bake for about 1 hour, until hot and bubbling.
  7. For thicker beans, remove foil and bake an additional 20–30 minutes, stirring occasionally.
  8. Stir before serving.
