Instructions

Step 1: Sauté the Vegetables

  1. Heat the olive oil in a large soup pot over medium-high heat.
  2. Add the onion and celery, sautéing for 5-7 minutes until softened.

Step 2: Brown the Beef

  3. Increase the heat to high and bring the mixture to a boil. Reduce to a rapid simmer, cover partially with a lid, and cook for at least 30 minutes. Stir occasionally to prevent sticking.
  4. Adjust the thickness as needed by adding more broth if it becomes too thick or simmering uncovered to reduce.
