Ingredients

Streusel Topping

  • ¾ cup all-purpose flour
  • ½ cup light brown sugar
  • 1 teaspoon cinnamon
  • ½ teaspoon salt
  • 5 tablespoons unsalted butter, cut into small pieces

Apple Coffee Cake Muffins

  • 2 large eggs
  • 1 cup granulated sugar
  • ½ cup vegetable or canola oil
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • ½ teaspoon salt
  • ½ teaspoon baking soda
  • 1 cup sour cream (light or regular) or plain Greek yogurt
  • 1 medium crisp-sweet apple (like Envy, Honeycrisp, Mutsu, Fuji, or Gala), peeled, cored, and chopped (about 1 heaping cup)

Glaze

  • ½ cup powdered sugar
  • 4–5 teaspoons heavy cream or half-and-half (adjust as needed for desired consistency)
  • ½ teaspoon vanilla extract

Instructions

Streusel Topping

  1. In a small mixing bowl, combine flour, brown sugar, cinnamon, salt, and butter.
  2. Use a pastry blender or fork to mix until crumbly.
  3. Work the mixture between your fingers until it starts to hold together. Set aside.

Apple Coffee Cake Muffins

  1. Preheat oven to 375°F (190°C). Line a 12-cup muffin pan with cupcake liners.
  2. In a large bowl, beat eggs with an electric mixer. Add sugar and beat for 1–2 minutes until fully combined.
  3. With the mixer running, gradually add oil, followed by vanilla extract.
  4. In a separate bowl, whisk together flour, cinnamon, nutmeg, salt, and baking soda.
  5. Gently fold the dry ingredients into the wet mixture, alternating with sour cream (or Greek yogurt), until just combined.
  6. Fold in the chopped apple. Be careful not to overmix.
  7. Divide the batter evenly among the muffin cups.
  8. Sprinkle the streusel topping evenly over each muffin, lightly pressing down. Brush off any excess from the spaces between muffins.
  9. Bake for 22–25 minutes, or until a toothpick inserted in the center comes out clean.
  10. Let muffins cool in the pan for 10–15 minutes, then transfer to a wire rack to cool completely.

Simple Powdered Sugar Glaze

  1. In a small bowl, whisk together powdered sugar, heavy cream, and vanilla.
  2. Adjust the cream amount to reach a thick but pourable consistency.
  3. Drizzle the glaze over completely cooled muffins.

Tips

  • Use crisp-sweet apples for the best texture and flavor.
  • Do not overmix the batter; overmixing can make muffins dense.
  • For easier cleanup, brush excess streusel away from the edges of the muffin pan before baking.

Variations and Substitutions

  • Substitute Greek yogurt for sour cream for a lighter option.
  • Add ½ cup chopped walnuts or pecans to the batter for extra crunch.
  • Swap half of the all-purpose flour with whole wheat flour for a nuttier flavor.
  • For a dairy-free option, use plant-based yogurt and oil instead of butter in the streusel.
