Ingredients

For the Sauce:

  • 3 tablespoons rice vinegar (Note 1)
  • 4 tablespoons soy sauce
  • 2 tablespoons hoisin sauce (Note 2)
  • ½ cup water
  • 1 teaspoon sesame oil
  • 4 tablespoons granulated sugar (Note 3)

To Thicken the Sauce:

  • 2 tablespoons cornstarch
  • 1 tablespoon water

Instructions

1. Mix the Sauce:
In a medium bowl, combine rice vinegar, soy sauce, hoisin sauce, water, sesame oil, and sugar. Whisk until the sugar fully dissolves and the mixture is smooth.

2. Prepare the Thickener:
In a small bowl, stir together cornstarch and 1 tablespoon of water to make a slurry. Set aside.

3. Cook the Sauce:
Before using, give the sauce a good whisk (or shake if stored in a jar, since cornstarch tends to settle). Pour it into a skillet over medium heat and cook, stirring constantly. Add the cornstarch slurry and continue stirring until the sauce thickens to your desired consistency.

4. Use or Store:
Toss the thickened sauce with crispy chicken, tofu, or vegetables. If storing, let it cool, then refrigerate in a sealed jar for up to one week. Shake well before reheating or using again.

  • Use low-sodium soy sauce: Helps control saltiness without sacrificing flavor.
  • Whisk before heating: Prevents cornstarch clumps and ensures a smooth texture.
  • Double the recipe: It stores well and can be used for quick future meals.

Variations and Substitutions

  • Vegan: Use a vegan-friendly hoisin sauce.
  • Gluten-free: Replace soy sauce with tamari or coconut aminos.
  • No hoisin? Mix 1 tablespoon soy sauce + 1 tablespoon peanut butter + ½ teaspoon honey as a substitute.
  • Add aromatics: Fresh minced garlic and ginger can enhance the depth of flavor.
