Ingredients:

  • 4 lb Yukon Gold potatoes (about 10 potatoes), peeled and quartered
  • 1 1/3 cups whole milk
  • 6 garlic cloves, smashed
  • 8 Tbsp unsalted butter, softened
  • 1/4 cup sour cream
  • 1 1/2 tsp fine sea salt (or to taste)
  • 2 Tbsp chopped fresh chives (for garnish)

Instructions:

  1. Place the quartered potatoes in a large pot and cover them with cold water. Bring to a boil, then reduce the heat to a simmer. Partially cover the pot and cook for 15-18 minutes, or until the potatoes are tender and can be easily pierced with a fork.
  2. While the potatoes cook, heat the milk and garlic cloves in a small saucepan over medium heat until it begins to steam. Once heated, remove from the stove and set aside. Discard the garlic if you prefer a less garlicky flavor.
  3. Drain the cooked potatoes and return them to the pot. Place the pot over very low heat and mash the potatoes with a potato masher or an electric hand mixer. Mash them immediately while they’re hot to avoid a gummy texture.
  4. Gradually drizzle the hot milk into the mashed potatoes until you reach your desired consistency.
  5. Add the softened butter in chunks, mashing it into the potatoes until fully incorporated. Stir in the sour cream and 1 1/2 teaspoons of salt (or adjust to taste).
  6. Serve the mashed potatoes warm, topped with additional butter and freshly chopped chives for garnish.

Tips, Variations, and Substitutions

  • Tips:
    • Be sure to mash the potatoes while theyโ€™re still hot to ensure they maintain a smooth, fluffy texture.
    • For extra creamy mashed potatoes, use a potato ricer instead of a masher or hand mixer.
    • If you prefer a stronger garlic flavor, leave the garlic cloves in the milk mixture as it infuses the flavor. For a milder taste, remove the garlic before mashing.
  • Variations:
    • Add grated Parmesan cheese or cream cheese for a richer, more savory flavor.
    • Try adding roasted garlic for a sweeter, more mellow garlic taste.
    • For a healthier version, swap the butter for olive oil and the sour cream for Greek yogurt.
  • Substitutions:
    • If you donโ€™t have Yukon Gold potatoes, you can use Russet potatoes for a fluffier texture, or red potatoes for a creamier, waxier texture.
    • Swap whole milk for half-and-half or heavy cream for a richer, creamier mash.
    • If youโ€™re out of chives, you can use parsley or green onions as a garnish.
