Flan for one is a simple and creamy single-serving dessert made with eggs, milk, sugar, and vanilla, topped with rich caramel sauce.   • ¼ cup sugar, divided

  • ½ cup whole milk
  • ¼ teaspoon vanilla extract

Instructions

1. Preheat the Oven
Position the oven rack in the center and preheat to 350°F (177°C).

2. Make the Caramel
In a 1-quart saucepan, combine 2 tablespoons of sugar with 1 tablespoon of water. Heat over low heat, stirring until the sugar dissolves, about 2 minutes.

3. Cook the Caramel
Increase heat to medium-high and boil without stirring until the syrup turns a deep amber color, swirling the pan occasionally. This usually takes 7–9 minutes. Watch closely as it can darken quickly.

4. Prepare the Ramekin
Immediately pour the caramel into a 10-ounce ramekin, tilting to evenly coat the bottom. If the caramel hardens, it will soften during baking.

5. Warm the Milk
In a small saucepan, combine the milk with 2 tablespoons sugar. Heat over medium-low until the sugar dissolves, keeping the milk warm but not boiling, about 2 minutes.

6. Temper the Egg
Whisk the egg in a bowl. Gradually add the warm milk, vanilla, and salt while whisking continuously to prevent the egg from curdling.

7. Strain the Custard
Pour the mixture through a fine-mesh strainer to remove any bubbles and ensure a smooth texture.

8. Set Up the Water Bath
Place the ramekin in a larger baking dish (about 5×5 inches). Pour hot water into the dish until it reaches halfway up the sides of the ramekin. Be careful to avoid splashing water into the custard.

9. Bake
Bake for 45 minutes, until the edges are set but the center still jiggles slightly. Remove from the oven and let the flan cool in the water bath for 1 hour.

10. Chill and Unmold
Cover the ramekin with plastic wrap and refrigerate overnight or up to 3 days. To serve, run a knife around the edges, place a plate on top, and invert the ramekin. Let it sit for a minute if it doesn’t release immediately.

11. Serve
Your homemade flan is ready to enjoy.
