Ingredients

  • ¼ cup butter, melted
  • ½ cup extra virgin olive oil
  • 1 French baguette, sliced into 1-inch thick pieces (about 20 slices)
  • 2 large Roma tomatoes, finely diced
  • 2 teaspoons garlic, minced
  • ⅓ cup fresh basil, finely chopped
  • ½ cup feta cheese, crumbled

Instructions

  1. Preheat the oven to 350°F (180°C).
  2. In a small bowl, mix the melted butter with the olive oil.
  3. Arrange the baguette slices on a baking sheet. Using a pastry brush, lightly coat both sides of each slice with the butter and oil mixture.
  4. Bake for 10 minutes, or until the bread is lightly golden on top. Remove from the oven and set aside, keeping the oven on.
  5. In a separate bowl, combine the diced tomatoes, minced garlic, chopped basil, and crumbled feta cheese. Mix gently.
  6. Spoon the tomato and feta mixture evenly over the toasted baguette slices.
  7. Return to the oven and bake for an additional 8–10 minutes, until warmed through.
  8. Serve warm.
