🥗 Ingredients

For the Salad:

  • 5 ounces mixed spring greens (or your favorite salad mix)
  • ½ small red onion, thinly sliced
  • 2 cups cherry tomatoes
  • 2 cups croutons (store-bought or homemade)
  • ½ cup freshly grated Parmesan cheese, plus more for topping
  • ⅓ cup sliced pepperoncini peppers

For the Italian Vinaigrette:

  • 3 tablespoons olive oil
  • 1 tablespoon red wine vinegar

✅ Tips

  • Slice onions thinly and soak in cold water for a few minutes to reduce sharpness.
  • Use fresh Parmesan for the best flavor—pre-shredded won’t have the same effect.
  • Toss gently to avoid bruising the greens.
  • Add dressing just before serving to keep the croutons crisp.

🔄 Variations and Substitutions

  • Add protein: Grilled chicken, tuna, or chickpeas work beautifully.
  • Cheese swap: Try crumbled feta or shaved Asiago for a twist.
  • No pepperoncini? Use banana peppers or olives.
  • Make it vegan: Omit cheese or use a plant-based alternative.
  • Low-carb version: Skip the croutons and add toasted nuts or seeds.

❓ FAQs

Can I prep this salad in advance?
Yes, prep all ingredients ahead, but keep the dressing and croutons separate until ready to serve.

Is the dressing spicy?
No, but you can add red pepper flakes for heat.

Can I use other greens?
Absolutely—romaine, spinach, or arugula all work great.
