Ingredients:

  • 4 pork chops (see note)
  • Salt & pepper to taste
  • 2 tablespoons olive oil
  • Butter (optional, to taste)

Instructions:

  1. Prepare the Pork Chops: Remove the pork chops from the fridge at least 15-30 minutes before cooking (ideally 1 hour). This helps them cook more evenly.
  2. Heat the Skillet: Place a skillet (preferably cast iron) over medium-high heat. Let the pan heat for a few minutes, ensuring it’s hot enough for a good sear.
  3. Season the Pork Chops: Pat the pork chops dry with paper towels. If desired, score the fat rim to help the pork cook evenly. Season generously with salt and pepper on both sides.
  4. Cook the Pork Chops: Add olive oil to the hot skillet. Place the pork chops in the skillet and cook for 3-5 minutes on each side. (Cook for 3 minutes for thinner chops and up to 5 minutes for chops up to 1-inch thick.) The pork should be golden brown on the outside and cooked through. For accuracy, use a meat thermometer to check for doneness—pork is safe at 145°F (a bit of pink inside is fine). If it’s not done yet, continue cooking for a little longer, but be careful not to overcook.
  5. Rest the Pork Chops: Remove the pork chops from the pan and top each with about 1/2 tablespoon of butter (optional). Let the pork chops rest for a few minutes before serving.
  6. Finish the Fat Rim (Optional): If the fat on the side of the chops isn’t fully rendered, hold the pork chop with tongs and place the fat directly into the hot oil until it’s browned.

Tips

  • Ensure the skillet is hot before adding the pork chops. A hot pan creates a nice sear and helps lock in moisture.
  • Let the pork chops rest after cooking to allow the juices to redistribute, keeping them tender.
  • If you’re cooking large pork chops, consider cooking them in batches to avoid overcrowding the pan.

Variations and Substitutions

  • Herbs & Spices: Add your favorite herbs like rosemary, thyme, or garlic powder to the seasoning for extra flavor.
  • Pork Chop Cuts: If you prefer bone-in chops, follow the same method but cook them a little longer for the bone to cook through.
  • Butter Alternatives: Try using flavored butter or drizzle the chops with a bit of balsamic glaze for a different twist.

FAQs

Q: Can I use a non-stick pan?
A: Yes, but a cast-iron skillet gives the best sear and flavor. Non-stick pans can work, but they may not produce the same results.

Q: How do I know when the pork chops are done?
A: The pork chops should reach an internal temperature of 145°F. Use a meat thermometer to ensure they’re perfectly cooked.

Q: What can I serve with these pork chops?
A: These pork chops pair well with mashed potatoes, roasted vegetables, sautéed greens, or a fresh salad.

Serving Suggestions

  • Serve with your favorite side dishes like mashed potatoes, roasted sweet potatoes, or a vegetable stir-fry.
  • For a complete meal, add a side of rice pilaf or a light salad.
  • Drizzle with a bit of fresh lemon juice or top with a tangy sauce like apple sauce or mustard for extra flavor.
