This easy meatloaf recipe combines simple ingredients with a flavorful glaze, creating a juicy and tender loaf that will become a family favorite. Perfect for a weeknight dinner or a comforting meal to serve to guests!

  • 2/3 cup panko breadcrumbs
  • 1/4 cup whole milk
  • 2 pounds ground beef (see note)
  • 2 large eggs
  • 4 cloves garlic, minced
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • Freshly ground black pepper, to taste
  • 1/4 cup fresh parsley, chopped
  • 2 tablespoons ketchup

For the Glaze:

  • 1/4 cup ketchup
  • 1/4 cup BBQ sauce (see note)
  • 2 tablespoons brown sugar

Instructions

1. Preheat the Oven:

  • Set your oven to 375ยฐF and position the rack in the middle of the oven.

2. Prepare the Meatloaf:

  • In a large bowl, combine the panko breadcrumbs and milk. Stir to mix and let it sit for a few minutes to absorb.
  • Add the ground beef, eggs, garlic, onion powder, Italian seasoning, salt, pepper, parsley, and ketchup to the bowl with the soaked breadcrumbs. Mix everything together using your hands, but avoid overworking the meat to keep the loaf tender.

3. Shape the Meatloaf:

  • Transfer the meat mixture into a 9×5 loaf pan lined with parchment paper (make sure some paper hangs over the edges for easy removal later). Press the mixture gently into the pan and shape the top into a loaf.

4. Bake the Meatloaf:

  • Place the pan in the oven and bake for 40 minutes. To prevent any drips, place the loaf pan on a baking sheet.

5. Make the Glaze:

  • While the meatloaf bakes, mix together the glaze ingredients (ketchup, BBQ sauce, and brown sugar) in a small bowl until well combined.

6. Add the Glaze:

  • After 40 minutes of baking, remove the meatloaf from the oven. Spoon the glaze over the top of the meatloaf, spreading it evenly. Return the pan to the oven and bake for another 15 minutes, or until the internal temperature reaches 155ยฐF.

7. Rest and Slice:

  • Let the meatloaf rest for 10-15 minutes after removing it from the oven. This helps the juices redistribute and makes it easier to slice. The meatloaf will continue cooking and reach a safe 160ยฐF as it rests.
  • Once rested, lift the meatloaf out of the pan using the parchment paper and transfer it to a plate. Slice and serve.
