Easy Chicken Enchiladas

Easy chicken enchiladas made with shredded chicken, red enchilada sauce, and a blend of Monterey Jack and cheddar cheese. This homemade enchilada recipe is perfect for weeknight dinners or family meals. Soft tortillas filled with flavorful chicken and cheese, baked until bubbly, and served with optional toppings like cilantro, avocado, sour cream, or lime.

Ingredients

  • 8 tortillas (corn, flour, or corn–flour blend)
  • 2 cups cooked shredded chicken (such as slow cooker taco chicken)
  • 2 cups red enchilada sauce (homemade or 15 oz canned)
  • 1½ cups shredded Monterey Jack cheese
  • 1½ cups shredded sharp cheddar cheese

Optional Garnishes

  • Fresh cilantro
  • Sliced green onions
  • Diced tomatoes
  • Chopped avocado
  • Sliced black olives
  • Sour cream
  • Lime wedges

Instructions

  1. Preheat the oven to 350°F (180°C). Lightly grease a 13 × 9-inch baking dish with nonstick cooking spray.
  2. Warm the tortillas to make them pliable. For flour or corn–flour blend tortillas, microwave a stack of 8 for about 40 seconds until softened.
  3. Spread a thin layer of enchilada sauce over the bottom of the prepared baking dish.
  4. Place a few tablespoons of shredded chicken near one end of each tortilla. Sprinkle with a small amount of Monterey Jack and cheddar cheese.
  5. Roll the tortillas tightly and place them seam-side down in the baking dish.
  6. Pour the remaining enchilada sauce evenly over the rolled tortillas and top with the remaining cheese.
  7. Bake uncovered for 20–25 minutes, until the sauce is bubbling and the cheese is fully melted.
  8. Remove from the oven and let rest for 5–10 minutes before serving.
  9. Garnish as desired and serve warm.
