Ingredients
- 1 cup butter (unsalted)
- 1 cup sugar (granulated)
- 1 cup of brown sugar
- 1 cup heavy whipping cream + 1 teaspoon
- a 1⁄4 teaspoon of salt
- 2 tsp vanilla extract (pure)
- 4 cups sugar (confectioners’)
- 2 cups toasted and coarsely chopped pecan halves
Instructions
Set aside a 9 x 13-inch baking dish that has been buttered.
In a large mixing bowl, sift the confectioners’ sugar. To break up any clumps, whisk for 1 minute.
Butter, sugars, cream, and salt in a large saucepan over medium heat. As the mixture comes to a boil, stir frequently with a rubber spatula.
Cook for 4 minutes while constantly stirring.
Remove from the heat and whisk in the vanilla extract and confectioners’ sugar until smooth. Pecans should be folded in at this point.
Cool to room temperature, about 3 hours, on a greased dish. Cut the squares into 64 1-inch squares.
