  • 4 pieces uncooked bacon, diced
  • 1 small white onion, finely diced
  • 1 jalapeno, stemmed, seeded, and diced (add extra for more heat)
  • 4 garlic cloves, minced
  • 1 (12-ounce) bottle dark Mexican beer (such as Negra Modelo)
  • 4 (15-ounce) cans pinto beans, rinsed and drained
  • 1 tablespoon brown sugar
  • 1 teaspoon dried oregano
  • 1 teaspoon chili powder
  • 1 teaspoon salt
  • 1/2 teaspoon cumin
  • 1 tablespoon fresh lime juice
  • 1/4 cup chopped fresh cilantro

Instructions

Cook the Bacon

  1. Heat a large sauté pan over medium-high heat. Add diced bacon and cook until crispy, stirring occasionally.
  2. Remove bacon with a slotted spoon and transfer to a plate. Set aside.

Sauté Vegetables

  1. Reserve 1 tablespoon of bacon grease in the pan and discard the rest.
  2. Add onion and jalapeno; sauté for 5 minutes until onions are soft and translucent.
  3. Add garlic and sauté 1–2 more minutes until fragrant.

Simmer the Beans

  1. Add beer, pinto beans, brown sugar, oregano, chili powder, salt, and cumin. Stir to combine.
  2. Bring to a simmer, then reduce heat to medium-low and cook uncovered for about 15 minutes.

Finish and Serve

  1. Stir in crispy bacon and lime juice.
  2. Garnish with chopped fresh cilantro and serve warm.
