Ingredients

  • 16 oz (2 blocks) cream cheese, softened
  • 1 tbsp Worcestershire sauce
  • ½ tsp black pepper
  • ¼ tsp garlic powder
  • ¼ tsp onion powder
  • 4.5 oz jar dried beef, finely chopped (divided)
  • 4 green onions, thinly sliced (green parts only, divided)
  • 1½ cups shredded sharp cheddar cheese (divided)
  • Salt, to taste

Instructions

  1. In a large mixing bowl, combine the softened cream cheese, Worcestershire sauce, black pepper, garlic powder, and onion powder. Beat with an electric mixer until smooth and creamy.
  2. Add ¾ of the chopped dried beef, ¾ of the sliced green onions, and ¾ of the shredded cheddar cheese. Mix gently until evenly distributed. Taste and adjust salt if needed.
  3. Set aside the remaining beef, green onions, and cheese in a covered container in the refrigerator for later use.
  4. Lay out 3 overlapping sheets of plastic wrap on a clean surface. Spoon the mixture into the center.
  5. Lift the edges of the plastic wrap and shape the mixture into a firm ball. Wrap tightly and refrigerate for at least 2 hours, or overnight for best texture.
  6. Before serving, combine the reserved dried beef, green onions, and cheddar cheese on a plate.
  7. Unwrap the chilled cheese ball and roll it in the topping mixture, pressing gently so it adheres evenly.
  8. Serve immediately with crackers, toasted bread, or fresh vegetables.

  • Chop the dried beef finely so it blends evenly into the mixture.
  • For easier shaping, slightly dampen your hands or use plastic wrap to mold the ball.

Variations and Substitutions

  • Swap cheddar with pepper jack for a spicier version.
  • Add a dash of hot sauce or cayenne pepper for extra heat.
  • Replace green onions with finely diced chives or shallots.
  • Use turkey or ham instead of dried beef if preferred.
  • Mix in chopped nuts (like pecans or walnuts) for added crunch.

FAQs

Can I make this ahead of time?
Yes, you can prepare it up to 24 hours in advance and keep it refrigerated until serving.

How long does it last in the fridge?
It stays fresh for about 3–4 days when stored in an airtight container.

Can I freeze it?
Freezing is not recommended, as the texture of cream cheese may change once thawed.

Do I have to coat the outside?
