Crockpot Tortellini Soup with Sausage

    Heat a skillet over medium heat. Add the sausage and onion, cooking for 7-8 minutes while breaking the sausage into small pieces with a spoon. Cook until browned, and if needed, drain any excess fat.
  2. Add Garlic
    Stir in the minced garlic and cook for another 30 seconds, until fragrant. Transfer the sausage mixture to your Crockpot.
  3. Assemble the Soup Base
    Add the carrots, celery, crushed tomatoes, diced tomatoes (with juices), and chicken broth to the Crockpot.
    • For quicker cooking (3-4 hours on high), finely chop the carrots and celery.
    • For slower cooking (7-8 hours on low or 4-5 hours on high), larger pieces are fine.
  4. Add Final Ingredients
    About 30 minutes before serving, stir in the cheese tortellini, heavy cream (if using), and spinach. Turn the Crockpot to high and stir occasionally until the tortellini is cooked and the spinach is wilted.
