  1. Place the chicken breasts, carrots, celery, chicken broth, vegetable broth, garlic, dried basil, Italian seasoning, and bay leaves into the slow cooker. Cook on low for 6 to 8 hours or on high for 3 to 4 hours.
  2. About 30 minutes before serving, remove the bay leaves and take out the chicken breasts. Shred the chicken using two forks, then return it to the slow cooker.
  3. Add the lemon juice, chopped parsley, and uncooked orzo to the slow cooker. Increase the heat to high. Stir the soup every 10 minutes to prevent the orzo from sticking to the bottom.
  4. When the orzo is tender, season the soup with salt and pepper to taste. Serve hot.
