Ingredients

  • ¼ cup all-purpose flour
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon paprika
  • 1 ½–2 pounds cube steak (about 4 pieces)
  • 3 tablespoons vegetable oil
  • 3 celery stalks, chopped
  • 1 small yellow onion, diced
  • 3 carrots, chopped
  • 2 garlic cloves, minced
  • 2 (14.5 oz) cans stewed tomatoes (with juice)
  • 2 tablespoons packed light brown sugar (adjust to taste)
  • 2 tablespoons Worcestershire sauce
  • 1 packet brown gravy mix

Instructions

  1. In a shallow dish, mix flour, garlic powder, onion powder, salt, black pepper, and paprika until combined.
  2. Coat each cube steak in the seasoned flour mixture, pressing lightly so it sticks. Set aside.
  3. Heat vegetable oil in a large skillet over medium-high heat. Once hot, quickly brown the cube steaks on both sides (about 1–2 minutes per side). Work in batches and avoid fully cooking the meat. Add more oil if needed.
  4. Place celery, onion, and carrots in the bottom of a slow cooker.
  5. Layer the browned cube steaks on top of the vegetables.
  6. In a bowl, whisk together minced garlic, stewed tomatoes with juice, brown sugar, Worcestershire sauce, and brown gravy mix until smooth.
  7. Pour the mixture over the meat and vegetables in the slow cooker.
  8. Cover and cook on LOW for 6–8 hours or HIGH for 4–6 hours, until the meat is tender and the vegetables are soft.
  9. Serve warm with the rich tomato gravy spooned over the top.

Why You’ll Love This Recipe

This slow cooker Swiss steak becomes tender and flavorful as it cooks in a rich tomato-based gravy. The cube steak breaks down slowly, absorbing the savory blend of Worcestershire sauce, vegetables, and seasoning. It’s a hearty, comforting one-pot meal that works well for family dinners and make-ahead cooking.

Tips

  • Browning the meat first adds deeper flavor but can be skipped if needed.
  • Cut vegetables evenly so they cook at the same rate.
  • Adjust brown sugar based on how sweet you prefer the sauce.
  • For a thicker gravy, remove the lid during the last 30 minutes of cooking.
  • Let the dish rest for 10 minutes before serving to enhance flavor.

Variations and Substitutions

  • Replace cube steak with round steak or chuck steak if needed.
  • Add mushrooms for extra depth and texture.
  • Swap carrots with potatoes for a heartier version.
  • Use crushed tomatoes instead of stewed tomatoes for a smoother sauce.
  • Add red pepper flakes for a slightly spicy version.
