    Slice the potatoes into thin, even ¼-inch rounds using a sharp knife or mandolin. Set aside.
  2. Make the creamy sauce
    In a small saucepan over low heat, combine the heavy cream, chicken broth, butter, minced garlic, salt, and black pepper. Stir occasionally until the butter is fully melted and the mixture is warmed through. Do not let it boil. Remove from heat.
  3. Layer the ingredients
    Lightly grease your crock pot if needed. Add one-third of the sliced potatoes in an even layer.
  4. Add sauce and cheese
    Pour about ½ cup of the cream mixture over the potatoes, then sprinkle a portion of the cheddar and Parmesan cheese on top.
  5. Repeat layers
    Continue layering the potatoes, sauce, and cheese two more times, finishing with cheese on top.
  6. Cook
    Cover and cook on high for 3–4 hours or low for 5–6 hours, until the potatoes are tender when pierced with a fork.
