  • ⅓ cup milk
  • 3 tablespoons cornstarch

1. Sear the Pork Roast:

  1. Heat olive oil in a skillet over medium-high heat.
  2. Season the pork roast lightly with salt and generously with freshly ground black pepper.
  3. Sear the roast on all sides until golden brown, then remove from heat and set aside.

2. Prepare the Crock-Pot:

  1. In the Crock-Pot, whisk together white wine (or sherry), Cream of Mushroom Soup, beef broth, and all seasonings until smooth.
  2. Place the seared pork roast into the liquid. Cover and cook:
    • On high for 6–7 hours, or
    • On low for 8–9 hours, until the pork is fork-tender.

3. Make the Gravy:

  1. Transfer the cooked roast to a cutting board and cover with foil to keep warm.
  2. In a small bowl, whisk together milk and cornstarch.
