Ingredients

  • Olive oil, as needed
  • 1 slice thick-cut bacon, diced
  • ½ cup diced yellow onion
  • 1 tablespoon minced garlic
  • 1 cup ketchup
  • 8 ounces tomato sauce
  • ¼ cup brown sugar
  • ¼ cup molasses
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon Dijon mustard
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • ½ teaspoon dried thyme
  • ¼ teaspoon cayenne pepper (optional, adjust to taste)
  • Freshly ground black pepper, to taste
  • 3-pound beef chuck roast, cut into large chunks and trimmed of excess fat

Instructions

  1. Prepare the Sauce
Heat olive oil in a large saucepan over medium heat. Add diced bacon and cook for 2 minutes, stirring occasionally.
Add the diced onion and cook for another 1–2 minutes until softened. Reduce heat to low, add garlic, and cook for 1–2 minutes until fragrant.
  2. Mix Barbecue Sauce
Stir in ketchup, tomato sauce, brown sugar, molasses, apple cider vinegar, Dijon mustard, cumin, smoked paprika, thyme, cayenne (if using), and black pepper. Simmer on low heat while preparing the beef.
  3. Prepare the Beef
Cut the chuck roast into 5–6 large chunks. Trim off excess fat from the edges.
  4. Cook in Crock-Pot
Place the beef chunks in a 6-quart slow cooker. Pour the prepared barbecue sauce over the beef. Cover and cook on:
    • LOW for 7–9 hours, or
    • HIGH for 5–7 hours,
until the beef is tender and easy to shred.
  5. Shred and Serve
Use two forks to shred the beef directly in the slow cooker, mixing it well with the sauce.

Why You’ll Love This Recipe

This Crock-Pot Barbecue Beef is tender, flavorful, and melts in your mouth. Slow cooking allows the beef to soak up the rich barbecue sauce, creating a dish that’s perfect for sandwiches, potatoes, or as a hearty main course for family meals.

Tips

  • Trim excess fat from the beef to avoid greasy sauce.
  • For extra smoky flavor, add a few drops of liquid smoke to the sauce.
  • Shred the beef carefully in the Crock-Pot to allow it to absorb maximum flavor.
  • Leftovers taste even better the next day as the flavors continue to develop.

Variations and Substitutions

  • Substitute boneless pork shoulder for beef for a different twist.
  • Use spicy barbecue sauce instead of homemade sauce for a bolder flavor.
  • Add a splash of Worcestershire sauce or hot sauce to enhance the depth of flavor.
  • For a lighter version, reduce sugar and molasses slightly.

FAQs

Can I make this ahead of time?
Yes. Cooked barbecue beef can be stored in an airtight container in the refrigerator for up to 3 days.

Can I freeze it?
Yes. Shredded beef in sauce freezes well for up to 3 months. Thaw overnight in the fridge before reheating.

Can I cook this in an oven instead of a slow cooker?
Yes. Place beef and sauce in a covered Dutch oven and cook at 300°F for 3–4 hours until tender.
