  • 2 large chicken breasts, sliced lengthwise
  • Salt and pepper, to taste
  • 1/2 teaspoon garlic powder
  • Flour, for dredging

  • 1/4 cup chicken broth or dry white wine
  • 1 heaping teaspoon Dijon mustard
  • 1 cup heavy cream
  • 2 cups fresh baby spinach, loosely packed
  • 1/4 cup sun-dried tomatoes (see note)
  • 1 tablespoon fresh basil, chopped

Instructions

  1. Prepare the Chicken
    Slice the chicken breasts lengthwise to create thinner cutlets. Season both sides generously with salt, pepper, and garlic powder. Lightly coat the chicken in flour, shaking off any excess.
  2. Cook the Chicken
    Heat the olive oil and butter in a large skillet over medium-high heat. Once the pan is hot, add the chicken and cook for 4-5 minutes per side, or until golden brown. Remove the chicken from the skillet and set aside.
  3. Make the Sauce Base
    Deglaze the skillet by adding the chicken broth or white wine along with the Dijon mustard. Use a wooden spoon to scrape up any browned bits stuck to the bottom of the pan. Let it simmer for 1-2 minutes.
  4. Finish the Sauce
    Reduce the heat to medium and stir in the heavy cream, fresh spinach, and sun-dried tomatoes. Let the sauce cook until the spinach wilts slightly, about 1-2 minutes.
  5. Combine Chicken and Sauce
    Return the cooked chicken to the skillet. Let it simmer gently in the sauce for about 5 minutes, or until the chicken is fully cooked and the sauce thickens slightly.
