  • 8 ounces cremini or white mushrooms, sliced

  • 4 cloves garlic, minced

  • 1/4 cup dry white wine (or chicken/vegetable broth)
  • 3/4 cup heavy/whipping cream
  • Salt & pepper, to taste
  • 1-2 tablespoons fresh parsley, chopped

Instructions

  1. Prepare the Base
    Heat the olive oil and butter in a skillet over medium-high heat. Once the butter melts, add the sliced mushrooms and chopped onions.
  2. Sauté
    Cook the mixture for about 10-12 minutes, stirring occasionally, until the mushrooms release their water, the liquid evaporates, and the mushrooms and onions are nicely browned.
  3. Add Aromatics
    Reduce the heat to medium. Stir in the minced garlic, Dijon mustard, Italian seasoning, and lemon juice. Sauté for 30 seconds, allowing the flavors to combine.
  4. Deglaze the Pan
    Pour in the white wine (or broth) and let it bubble for about 30 seconds to 1 minute, scraping any browned bits from the bottom of the pan.
  5. Incorporate the Cream
    Slowly add the heavy cream and stir well. Let the sauce simmer for 3-5 minutes, or until it thickens to your desired consistency.
  6. Finish with Seasoning
    Season the sauce generously with salt and pepper to taste. Stir in the freshly chopped parsley for a burst of color and flavor.
