  • 2-3 cloves garlic, minced

  • 1 cup heavy/whipping cream
  • 1 pound uncooked potato gnocchi
  • 2 cups (packed) fresh baby spinach

  • Fresh parsley, chopped, for garnish

  1. Sauté the Aromatics: Heat olive oil in a large skillet over medium-high heat. Add the chopped onion and sauté for about 5 minutes, stirring occasionally, until it softens and starts to lightly brown.
  2. Cook the Mushrooms: Add the sliced mushrooms, minced garlic, and Italian seasoning to the skillet. Stir well and cook for another 5 minutes, allowing the mushrooms to release their moisture and brown slightly.
  3. Incorporate Flavor: Stir in the Dijon mustard and pour in the white wine. Let it simmer for 1-2 minutes, allowing the wine to reduce slightly.
  4. Add the Cream and Gnocchi: Pour in the heavy cream and add the gnocchi to the skillet. Increase the heat until the mixture begins to bubble, then reduce to medium-low. Cover the skillet and cook for 3 minutes.
  5. Add Spinach: Stir in the baby spinach, cover the skillet again, and cook for an additional 3 minutes, or until the spinach wilts.
  6. Finish with Parmesan: Mix in the grated Parmesan cheese and season with salt and pepper to taste. If the gnocchi isn’t fully cooked or tender, continue cooking for another couple of minutes.
  7. Serve and Garnish: Remove from heat, sprinkle with fresh parsley, and serve immediately. Top with additional Parmesan if desired.
