Ingredients

For the Pasta & Chicken:

  • 12 ounces (340 g) dried pasta, any shape
  • 2 tablespoons (30 ml) olive oil
  • 1 pound (450 g) chicken breasts
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper

For the Creamy Lemon Sauce:

  • 1 tablespoon butter
  • 3 cloves garlic, minced
  • ½ cup (120 ml) heavy cream
  • 1 tablespoon (15 ml) lemon juice
  • ¼ cup (21 g) grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped (for garnish)
  • 1 teaspoon lemon zest (optional, for garnish)

Instructions

1. Cook the Pasta

Bring a large pot of salted water to a boil.
Cook the pasta according to package instructions until al dente. Drain and set aside, reserving a small cup of pasta water.

2. Cook the Chicken

Heat olive oil in a large skillet over medium-high heat.
Season the chicken breasts with salt and black pepper.
Cook the chicken for 4–5 minutes per side or until fully cooked (internal temperature should reach 165°F / 74°C). Remove chicken from the pan and set aside. Slice into strips or cubes once slightly cooled.

3. Make the Creamy Lemon Sauce

In the same pan, melt butter over medium heat.
Add garlic and sauté for 1 minute until fragrant.
Stir in heavy cream and lemon juice, whisking until smooth.
Add Parmesan cheese and stir until melted into the sauce.
If the sauce is too thick, add a splash of reserved pasta water to loosen.

4. Combine Pasta and Chicken

Add the cooked pasta and chicken back into the skillet.
Toss everything together so the pasta and chicken are evenly coated in the creamy lemon sauce.
Taste and adjust seasonings with more salt, pepper, or lemon juice if desired.

5. Garnish and Serve

Top with additional Parmesan, chopped parsley, and lemon zest if using. Serve immediately.

Tips

  • Reserve pasta water: It helps thin the sauce without diluting the flavor.
  • Do not overcook chicken: It will become dry; use a thermometer for accuracy.
  • Use fresh lemon juice: Provides the best vibrant flavor.
  • Whisk continuously: Prevents sauce from separating or clumping.

Variations and Substitutions

  • Protein swap: Use shrimp, salmon, or turkey instead of chicken.
  • Cream alternatives: Half-and-half or coconut cream for a lighter or dairy-free version.
  • Cheese alternatives: Pecorino Romano or Asiago for a sharper flavor.
  • Vegetable boost: Add spinach, asparagus, or peas for color and nutrients.
  • Pasta alternatives: Gluten-free or whole wheat pasta works well.

FAQs

Can I make this ahead of time?
Yes, keep chicken and pasta separate and reheat together with a splash of cream to restore the sauce.

How can I make it lighter?
Use half-and-half instead of heavy cream and reduce butter.

Can I use frozen chicken?
Yes, but thaw completely and pat dry before cooking.

What if my sauce is too thick?
Add reserved pasta water a tablespoon at a time until desired consistency.

Serving and Suggestions

  • Serve with a side salad or steamed vegetables.
  • Pair with a crisp white wine, like Sauvignon Blanc or Pinot Grigio.
  • Add a sprinkle of red pepper flakes for a hint of heat.
  • Serve in deep bowls to enjoy every bit of the creamy sauce.
  • Leftovers can be stored in the fridge for 2–3 days and reheated gently.
