  • 12 ounces uncooked pasta (bucatini, spaghetti, linguine, or angel hair)
  • 6 thin-sliced boneless, skinless chicken breasts
  • Salt and freshly ground black pepper, to taste

  • ⅓ cup finely diced shallots
  • 2 teaspoons minced garlic
  • 1 cup dry white wine (Sauvignon Blanc, Pinot Grigio, or Chardonnay)
  • 1 ½ cups low-sodium chicken broth
  • ¼ cup fresh lemon juice (from 1 large lemon)
  • ¼ teaspoon red pepper flakes, or to taste
  • 2 tablespoons butter
  • ¼ cup heavy cream
  • 4 tablespoons chopped fresh basil, divided
  • ½ cup finely shredded Parmesan cheese

Instructions

  1. Prepare the chicken: If needed, cover chicken breasts with plastic wrap and lightly pound to ½-inch thickness. Season both sides with salt and pepper.
  2. Preheat oven to 375°F (190°C).
  3. Cook the pasta according to package instructions. Drain and reserve ½ cup pasta water.
  4. Brown the chicken: In a large oven-safe skillet, heat 2 tablespoons olive oil over medium-high heat. Add chicken in batches and cook 2–3 minutes per side until golden brown. Chicken does not need to be fully cooked at this stage. Transfer to a plate and set aside.
  5. Make the sauce: Reduce heat to medium. Add shallots and garlic to the skillet and cook for 1–2 minutes until fragrant. Pour in white wine, scraping up any browned bits from the pan. Simmer for 3–4 minutes until slightly reduced. Add chicken broth, lemon juice, and red pepper flakes. Bring to a low boil over medium-high heat and simmer 10–15 minutes until slightly thickened.
  6. Finish the sauce: Remove skillet from heat and stir in butter until melted. Add heavy cream and combine. Return chicken to the skillet, spooning sauce over the top. Transfer the skillet to the oven and bake 8–10 minutes until chicken is fully cooked. Remove from oven and sprinkle with 2 tablespoons chopped basil.
  7. Toss the pasta: In a large bowl, combine cooked pasta with Parmesan, remaining basil, and enough reserved pasta water to coat and moisten.
  8. Serve: Plate pasta and top with chicken and a generous spoonful of creamy lemon sauce.
