Ingredients

  • 4 pork chops (see notes)

  • Salt & pepper, to taste

  • 1 tablespoon olive oil

  • 2 tablespoons butter, divided

  • 1 head garlic, cloves peeled

  • 1 tablespoon flour

  • 1/2 cup chicken broth

  • 1/2 teaspoon lemon juice

  • 1/4 teaspoon garlic powder

  • 3/4 cup heavy cream

  • Fresh parsley, chopped (optional)

Directions

  • Remove pork chops from the fridge 15-30 minutes before cooking. Season generously with salt and pepper.
  • Heat olive oil and 1 tablespoon of butter in a deep skillet over medium-high heat. Sear pork chops for 3-5 minutes per side, until golden. Transfer to a plate.
  • Reduce heat to medium (or medium-low if using cast iron). Add remaining butter and garlic cloves to the skillet. Cook, stirring often, for about 3 minutes until garlic is slightly browned.
  • Push garlic to one side and sprinkle flour into the skillet. Cook for 30 seconds, stirring to form a roux.
  • Pour in chicken broth and lemon juice. Stir and cook for about a minute, until sauce thickens.
  • Add garlic powder and cream. Stir until garlic powder is dissolved.
  • Return pork chops to the skillet. Simmer for 3-5 minutes until sauce thickens and pork reaches an internal temperature of 145°F. Season with salt and pepper. Garnish with parsley if desired.

Notes

  • Use an instant-read thermometer to avoid overcooking. Pork is safe at 145°F with a hint of pink inside.
Boneless or bone-in pork chops are suitable. Ideal thickness is 0.75-1 inch for even cooking.
