Creamy Cajun Chicken Pasta Recipe

This Creamy Cajun Chicken Pasta is a comforting, flavorful dish with tender chicken, al dente pasta, and a rich, spicy cream sauce. It’s perfect for a weeknight dinner or a cozy weekend meal.

Ingredients

  • 12 ounces penne pasta (or any short pasta)
  • 3 boneless, skinless chicken breasts, sliced into thin cutlets
  • 2 tablespoons Cajun seasoning, divided
  • Salt and black pepper, to taste
  • 1 tablespoon olive oil
  • 2 tablespoons unsalted butter, divided
  • ½ yellow onion, finely diced
  • 2 cloves garlic, pressed or minced
  • 1 cup canned diced tomatoes
  • 1 cup heavy cream (double cream in the UK)
  • ½ cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Cook the Pasta:
    Bring a medium saucepan of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve ½ cup of the pasta water, then drain.
  2. Season and Cook the Chicken:
    Season the chicken cutlets with salt, pepper, and 1 tablespoon Cajun seasoning.
    Heat olive oil and 1 tablespoon butter in a skillet over medium heat. Add the chicken cutlets and cook 3–4 minutes per side, until cooked through and golden brown. Remove the chicken and keep warm. Cook in batches if needed to avoid overcrowding the pan.
  3. Prepare the Sauce:
    Wipe any burnt bits from the pan with paper towels. Melt the remaining tablespoon of butter and sauté the onion until soft and translucent. Add garlic and sauté for 30 seconds. Stir in diced tomatoes, the remaining Cajun seasoning, and heavy cream.
  4. Finish the Sauce:
    Mix the sauce using a whisk or flexible spatula. Stir in Parmesan cheese until melted. Taste and adjust seasoning with salt and pepper. If the sauce is too thick, add a splash of the reserved pasta water until it reaches your desired consistency.
  5. Combine Pasta and Chicken:
    Slice the cooked chicken into thin strips and toss with the pasta and sauce until evenly coated.
  6. Serve:
    Plate the pasta and garnish with chopped parsley and extra Parmesan cheese. Serve immediately.
