  1. Remove the pork chops from the refrigerator about 15-30 minutes before cooking to bring them to room temperature.
  2. Cut the bacon into small pieces using kitchen shears or a knife. Cook the bacon in a skillet over medium-high heat until crispy, about 10 minutes. Transfer the cooked bacon to a paper towel-lined plate, leaving about 2 tablespoons of bacon fat in the skillet.
  3. Pat the pork chops dry with paper towels, then season both sides generously with salt and pepper.
  4. Add the pork chops to the skillet and sear them for 3-5 minutes per side—3 minutes for thinner chops and up to 5 minutes for chops about 1-inch thick—until golden brown. Remove the pork chops from the skillet and set aside.
  5. If the skillet looks dry, add 1 tablespoon of butter. Otherwise, sprinkle the flour into the skillet and stir it into the fat. Cook for about 30 seconds to eliminate the raw flour taste.
  6. Slowly whisk in the chicken broth, lemon juice, and garlic powder. Cook for about a minute, stirring constantly, until the sauce thickens slightly and reduces.
  7. Stir in the heavy cream, then return the pork chops and bacon (including any juices from the plate) to the skillet. Simmer for 3-5 minutes, letting the sauce bubble gently until it thickens and the pork chops reach an internal temperature of 145°F. Keep in mind the pork will continue to cook slightly after removing from heat.
  8. Taste the sauce and season with additional salt and pepper if needed. Garnish with chopped parsley before serving.
