Cream Cheese Pasta Sauce

Ingredients

  • 1 lb (450 g) uncooked pasta, any shape
  • 1 tbsp butter
  • 3 cloves garlic, minced
  • 8 oz (225 g) cream cheese, softened
  • 1 cup (250 ml) reserved pasta water, or water, vegetable, or chicken stock
  • ยฝ cup grated Parmesan cheese
  • ยฝ tsp ground black pepper
  • Salt, to taste
  • 1 tbsp chopped fresh parsley

Instructions

1. Cook the Pasta
Bring a large saucepan of water (about 6 cups) to a boil over medium heat. Add 1 tsp of salt and the pasta. Cook according to package directions until al dente. Reserve 1โ€“2 cups of the pasta water before draining.

2. Prepare the Sauce
In a skillet over medium heat, melt the butter. Add the minced garlic and sautรฉ for about 30 seconds, being careful not to let it brown.

Add the softened cream cheese and 1 cup of the reserved pasta water. Whisk continuously until the cream cheese melts completely and the sauce becomes smooth and emulsified.

3. Add Cheese and Seasoning
Stir in the grated Parmesan cheese until fully melted. Season with black pepper and salt to taste, adjusting carefully since Parmesan is already salty. Remove from heat.

4. Combine Pasta and Sauce
Add the drained pasta to the skillet. Toss with the sauce using kitchen tongs until each piece is evenly coated. If the sauce is too thick, add a little more reserved pasta water until it reaches the desired consistency. Stir in chopped parsley before serving.
