  • 2 cups (320 g) frozen corn, thawed
  • ½ cup (120 g) sour cream
  • 2 cups shredded cheddar cheese, divided

  • 32 ounces (900 g) frozen tater tots
  • 2 tablespoons fresh parsley, finely chopped

Instructions

  1. Preheat Oven:
    Set your oven to 375°F (190°C).
  2. Cook the Beef:
    In a Dutch oven or large skillet, heat olive oil over medium heat. Add the ground beef and cook, breaking it apart with a wooden spoon, until no longer pink. Drain excess fat if needed. Season with salt and pepper.
  3. Add Aromatics:
    Stir in the diced onion and cook for 2–3 minutes until translucent. Add garlic and cook for an additional 30 seconds until fragrant.
  4. Make the Creamy Mixture:
    Add the diced tomatoes, thawed corn, sour cream, and 1 cup of shredded cheddar. Stir until the cheese melts and the mixture is well combined. Remove from heat.
  5. Assemble the Casserole:
    Pour the beef and vegetable mixture into a casserole dish. Top with the remaining 1 cup of cheddar cheese, then arrange tater tots evenly over the top.
