  1. Preheat oven to 350°F (175°C). Grease a 9×9-inch baking dish with nonstick spray.
  2. In a bowl, mix cornbread mix, milk, and egg until smooth. Pour into the prepared dish.

  4. While baking, cook the ground beef in a skillet until browned. Drain excess fat.
  5. Stir in taco seasoning and water, then add Mexicorn and Rotel. Mix well and let simmer for a few minutes.
  6. Remove cornbread from the oven and spread the beef mixture evenly over the top.
  7. In a bowl, mix sour cream with 1 cup shredded cheese and green onions. Spread gently over the beef layer.
  8. Sprinkle the remaining 1 cup cheese on top.
  9. Bake uncovered for 25 minutes, until hot and cheese is melted.
  10. Let rest a few minutes before slicing. Add optional toppings and serve.
