Classic Gingerbread Cake (Warm, Spiced & Moist)

This old-fashioned gingerbread cake is rich, moist, and perfectly spiced with ginger, cinnamon, and cloves. Sweetened with molasses and brown sugar, this holiday-favorite cake is simple to make and pairs beautifully with whipped cream or cream cheese frosting.

Ingredients

  • 2 cups (184 g) all-purpose flour
  • 2 tsp ground ginger
  • 1ยฝ tsp baking soda
  • 1 tsp ground cinnamon
  • ยฝ tsp ground cloves
  • ยฝ tsp fine sea salt
  • ยฝ cup (1 stick) unsalted butter, softened
  • ยพ cup packed light brown sugar
  • ยพ cup unsulphured molasses
  • 1 tsp vanilla extract
  • 1 large egg
  • 1 cup boiling water
  • Optional toppings: whipped cream, cream cheese frosting, powdered sugar

Instructions

1. Prepare the Pan & Oven:

Preheat oven to 350ยฐF (175ยฐC). Line a 9ร—9-inch baking pan with parchment paper, leaving some overhang for easy removal.

2. Mix Dry Ingredients:

In a medium bowl, whisk together the flour, ginger, baking soda, cinnamon, cloves, and salt until well combined. Set aside.

3. Cream Wet Ingredients:

In a large mixing bowl (or stand mixer), beat the butter and brown sugar on medium-high speed for about 2 minutes, until light and fluffy.
Add the molasses, vanilla, and egg. Beat on medium-low speed until combined, scraping down the sides of the bowl as needed.

4. Combine & Add Boiling Water:

Add the dry ingredients to the wet mixture and mix on medium-low speed until just combined.
Carefully pour in the boiling water and mix on low speed until fully incorporated. The batter will be thinโ€”this is normal.

5. Bake:

Pour the batter into the prepared pan and smooth the top.
Bake for 30โ€“40 minutes, or until a toothpick inserted into the center comes out clean.

6. Cool & Serve:

Let the cake cool in the pan on a wire rack for at least 30 minutes before slicing.
Top with whipped cream, cream cheese frosting, or a light dusting of powdered sugar, and serve.
