Ingredients

  • 1 cup plain Greek yogurt*
  • ½ cup packed fresh cilantro
  • ¼ cup freshly squeezed lime juice
  • ½ teaspoon ground cumin
  • ½ teaspoon fine sea salt
  • ¼ teaspoon freshly cracked black pepper
  • 3 green onions (green parts only)
  • 2 garlic cloves
  • (Optional) 1 jalapeño or serrano pepper, stemmed and cored
  • 1 (14 oz) bag coleslaw mix (about 7–8 cups)*

Instructions

  1. Make the Dressing:
    In a blender or food processor, combine the Greek yogurt, cilantro, lime juice, cumin, salt, pepper, green onions, garlic, and jalapeño (if using). Pulse a few times until the mixture is smooth and well-blended.
  2. Toss the Slaw:
    Place the coleslaw mix in a large mixing bowl. Pour the dressing over the slaw and toss until evenly coated.
  3. Taste and Adjust:
    Add extra lime juice, salt, or pepper to taste if needed.
  4. Serve or Chill:
    Serve immediately, or cover and refrigerate for up to 24 hours for even better flavor.
