This Chicken Sloppy Joes recipe is a lighter twist on the classic beef version juicy, saucy, and packed with flavor. Made with ground chicken, bell peppers, and a tangy homemade sauce, these sandwiches are a quick and easy dinner the whole family will love.

Ingredients

  • 2 tablespoons (30 ml) olive oil (not extra virgin) or avocado oil
  • 1 lb (450 g) ground chicken
  • ½ medium yellow onion, finely diced
  • 2 cloves garlic, minced
  • 1 medium green bell pepper, finely diced
  • ½ cup (120 ml) ketchup
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon yellow mustard
  • 2 tablespoons tomato paste
  • 1 teaspoon chili powder
  • ½ teaspoon salt
  • ¼ cup (60 ml) water (add more if needed)
  • 4–6 brioche buns

Instructions

  1. Cook the Chicken and Veggies
    Heat the olive oil in a large non-stick skillet over medium-high heat. Add the ground chicken, onion, garlic, and bell pepper. Cook for 5–7 minutes, breaking the chicken into small crumbles, until no longer pink.
  2. Make the Sauce
    Reduce heat to medium and stir in the ketchup, Worcestershire sauce, mustard, tomato paste, and chili powder. Mix well to coat the chicken and vegetables evenly.
  3. Simmer
    Pour in the water, stir, and reduce heat to low. Let the mixture simmer for 10–15 minutes, stirring occasionally, until the sauce thickens and flavors meld.
  4. Toast the Buns
    While the filling simmers, lightly toast the brioche buns on a griddle or in the oven with a little butter until golden.
  5. Assemble and Serve
    Spoon the chicken sloppy joe mixture onto the bottom halves of the toasted buns. Top with the other halves and serve warm.
