Ingredients

Optional Bacon:

  • 6 slices bacon

Veggies & Seasoning:

  • 4 scallions, thinly sliced (white and green parts separated)
  • 1 large red bell pepper, cored and diced
  • 1 large jalapeño, cored and diced
  • 6 garlic cloves, minced or pressed
  • 2 tsp chili powder
  • 1 tsp ground cumin
  • Fine sea salt and freshly-cracked black pepper

Filling:

  • 1 lb cooked shredded or diced chicken
  • 2 (15-ounce) cans pinto or black beans, rinsed and drained
  • 1 cup (8 oz) sour cream
  • 1/4 cup finely chopped fresh cilantro

Tortillas & Cheese:

  • 16 (10-inch) or 24 (8-inch) flour tortillas
  • 3–4 cups shredded Mexican blend or Pepperjack cheese
  • Melted butter for brushing

For Serving:

  • Guacamole, pico de gallo, red salsa, salsa verde, or extra sour cream

Instructions

1. Cook Bacon (Optional):
Cook bacon in a large sauté pan over medium-low heat until crisp. Transfer to a paper-towel-lined plate, leaving 1 tablespoon of bacon grease in the pan.

2. Sauté Vegetables:
Increase heat to medium-high. Add the white parts of the scallions, bell pepper, and jalapeño. Sauté for 5 minutes until softened. Stir in garlic, chili powder, cumin, salt, and pepper, cooking for 2 more minutes.

3. Prepare Chicken Filling:
In a large mixing bowl, combine sautéed veggies, cooked bacon, shredded chicken, beans, sour cream, cilantro, and the green parts of the scallions. Mix until evenly combined. Adjust seasoning with extra salt and pepper if needed.

4. Prep Oven and Baking Sheet:
Preheat oven to 425°F. Lightly brush a 13×18-inch sheet pan with melted butter.

5. Assemble Quesadilla:
Arrange tortillas overlapping along the edges of the pan, leaving two extra tortillas layered in the center to cover the base. Spread chicken filling evenly over the tortillas and sprinkle with cheese. Layer two more tortillas on top, then fold the overhanging edges toward the center to cover the filling. Brush the top evenly with melted butter.

6. Bake:
Place another baking sheet on top to weigh it down. Bake for 20 minutes. Remove the top sheet and bake for an additional 5 minutes until tortillas are lightly golden.

7. Serve:
Slice into pieces and serve warm with guacamole, salsa, or other favorite toppings.
