Ingredients

  • Dijon Cream Sauce

  • 3 tablespoons unsalted butter

  • 2 cloves garlic, grated or minced

  • 3 tablespoons flour

  • 1/2 cup chicken broth

  • 1 1/2 cups milk (skim or full cream)

  • 1 tablespoon Dijon mustard

  • 1 teaspoon chicken or vegetable stock/bouillon powder

  • 1/4 cup fresh grated Parmesan cheese

  • Salt and pepper to taste

  • 2 tablespoons fresh parsley (optional, for garnish)

  • Casserole

  • 2 cups fresh broccoli florets (uncooked)

  • 4 cups cooked or rotisserie chicken (shredded or diced)

  • 2 cups diced ham

  • 2 cups shredded Swiss cheese

  • 1/4 cup fresh grated Parmesan cheese

  • Casserole Topping

  • 1 cup panko breadcrumbs

  • 2 tablespoons butter (melted)

Directions

  • Make the Dijon Cream Sauce
  • In a small saucepan over medium heat, melt the butter.
  • Add the garlic and sauté for about 30 seconds until fragrant.
  • Lower the heat and whisk in the flour, cooking for 1 minute.
  • Gradually pour in the chicken broth and milk, whisking continuously until smooth.
  • Stir in the Dijon mustard, stock powder, and Parmesan cheese. Cook for 2-3 minutes, whisking consistently, until the sauce thickens. If needed, add more milk, one tablespoon at a time, to reach your desired consistency. Season with salt and pepper to taste. Optionally, mix in parsley for added freshness.
  • Prepare the Casserole
  • While preparing the sauce, bring a pot of salted water to a boil. Add the broccoli florets and blanch for 2-3 minutes until they are bright green and slightly tender.
  • Preheat your oven to 400°F (200°C).
  • In a greased 2-quart casserole dish, layer the shredded chicken at the bottom. Add the cooked broccoli and diced ham on top.
  • Pour the Dijon cream sauce evenly over the chicken, broccoli, and ham. Finish by sprinkling both Swiss and Parmesan cheeses over the top.
  • In a small bowl, mix the panko breadcrumbs with melted butter and evenly sprinkle this mixture over the casserole.
