Chicken and Broccoli Stir-Fry

Easy chicken and broccoli stir-fry with tender chicken, crisp broccoli, and a flavorful homemade sauce. This quick weeknight dinner combines garlic, ginger, soy sauce, and honey for a savory and slightly sweet dish perfect over rice, noodles, or quinoa.

Ingredients

Stir-Fry:

  • 2 Tbsp olive oil, divided
  • 2 boneless, skinless chicken breasts, cut into bite-sized pieces
  • Salt and pepper, to taste
  • 1 batch Stir-Fry Sauce (see below)
  • 1 bunch broccoli, chopped into small florets
  • 1 tsp toasted sesame oil
  • Toppings: sliced green onions, toasted sesame seeds

Stir-Fry Sauce:

  • 2/3 cup water
  • 1/3 cup reduced-sodium soy sauce
  • 3 Tbsp rice vinegar
  • 2 Tbsp cornstarch
  • 2 Tbsp honey
  • 2 cloves garlic, minced
  • 1 tsp ground ginger

Instructions

  1. Cook the Chicken:
    Heat 1 tablespoon of olive oil in a large sauté pan over medium-high heat. Add chicken pieces and season with salt and pepper. Cook for about 5 minutes, stirring occasionally, until browned and mostly cooked through.
  2. Prepare the Sauce:
    While the chicken cooks, combine all stir-fry sauce ingredients in a small bowl and whisk until smooth.
  3. Cook the Broccoli:
    Add the remaining tablespoon of olive oil to the pan with the chicken. Stir in the broccoli and cook for 3 minutes, until bright green and slightly tender.
  4. Combine and Finish:
    Pour in the prepared stir-fry sauce and cook for 1 more minute, until the sauce thickens and coats the chicken and broccoli. Remove from heat and stir in the toasted sesame oil.
  5. Serve:
    Serve warm, garnished with sliced green onions and toasted sesame seeds. Store leftovers in a sealed container in the refrigerator for up to 3 days.
