  • 1 cup (237ml) vegetable stock
  • 2 tablespoons butter

  • 9 ounces (255g) cheddar cheese, grated

  1. Prepare the potatoes: Wash and slice the potatoes into ¼-inch-thick rounds.
  2. Cook the potatoes:
    • Pressure cooker method: Add the potato slices and vegetable stock to the cooker. Seal the lid and cook on high pressure for 1 minute.
    • Stovetop method: Boil the potatoes in vegetable stock until tender but still holding their shape.
      Drain and set aside.
  3. Make the cheese sauce: Using the sauté function on the pressure cooker (or a regular saucepan), melt the butter. Add the minced garlic and cook for 1 minute until fragrant. Stir in the thyme, heavy cream, and cheddar cheese. Mix until smooth and creamy.
  4. Assemble: Layer the cooked potatoes in a casserole dish. Pour the cheese sauce evenly over the top and sprinkle with extra cheddar cheese.
